Cookies with Lollies and Letters - Oh my!



Having established my credentials as an expert on playtime here, I feel well qualified to recommend one of my go-to activities with the kids - baking! Obviously it's right up my alley, but the kid's love it too. Well, they love mixing stuff in a bowl and putting sprinkles on things. But we call that baking around here!



 

When the kids are around, there's usually just enough time to whip up a quick batch of cupcakes or cookies and have them cooled enough to decorate. That's if I can stop the little buggers from eating all the icing and sprinkles first of course!

This cookie recipe is perfect for a quick visit or playdate - with just three ingredients and only a few minutes required in the oven they'll be done and ready to eat before you have to return the kids to their rightful owners. And you can decorate and flavour them with whatever you have to hand.
 
These stained glass biscuits are just as easy as going down the icing and sprinkles route, and the kids will be delighted with the little window in their cookie, in their intial. Easily Aunty / babysitter of the year stuff!
 
 

Letter Window Cookies

 
This recipe makes 8 cookies, but double it if you have lots of kids to amuse. The cookie dough can also be made ahead and refrigerated.
 
 
 
 

Ingredients


125g butter, softened
1/2 cup icing sugar
1 1/4 cups plain flour
Hard or boiled sweets in various colours (approximately 1-2 per cookie depending on size)
 

Instructions

 
1. Beat butter and sugar with an electric mixer until pale and creamy, then sift flour into a bowl to form a cookie dough. Knead and roll out dough to about 1cm height and cut out shapes with cookie cutters. Also cut out and remove a shape from the middle
 
2. Place cookies onto an oven tray (either non-stick or lined with baking paper) and refrigerate for at least 15 minutes.
 
 
 
3. In the meantime, preheat the oven to 180 degrees Celsius and prepare the lollies by dividing them by colour and crushing them into small pieces.
 

 


4. Remove cookies from the fridge and bake for 5 minutes. Then, remove from oven and carefully fill the centre of each with crushed lollies. Remove any crumbs that fall on the cookie dough or they will stain it.


 
 
5. Bake for a further 5 minutes or until the cookie is lightly browned and the lollies have completely melted.
 
6. When baked, remove cookies from the oven and cool them on a wire tray.
